Chicken Tacos Lettuce Wraps

Tacos are a go-to classic! This version takes all the best parts of a taco and turns it into a healthy dinner. It’s easy to whip up in 20 minutes or less, and makes a light yet filling meal.

  • 1 lb. ground chicken
  • ½ Tbsp. onion powder
  • 1 tsp. chili powder
  • 1 tsp. cumin
  • 1½ tsp. garlic salt
  • 1 tsp. fennel seed
  • 8 large romaine leaves
  • 1 medium avocado, peeled, pitted, and diced
  • ½ cup diced cherry tomatoes
  • ¼ cup chopped fresh cilantro
  • ¼ cup diced scallions


  • In a large skillet, brown chicken with onion powder, chili powder, cumin, garlic salt, and fennel seed over medium-high heat. Sauté until chicken is no longer pink, about 10 minutes.
  • To serve, place chicken on a romaine leaf topped with avocado, cherry tomatoes, cilantro, and scallions.
