Chicken with Lime Sauce

Limes and lemons need to be washed well before slicing. Run them under water and scrub the peel with a produce scrub brush.

Ingredients

  • 6 boneless, skinless chicken breasts
  • ½ Tbsp. olive oil
  • 1 clove fresh garlic, minced
  • ½ tsp. all-purpose seasoning
  • 1 cup chicken broth
  • 1½ Tbsp. brown sugar
  • ¼ cup lemon juice
  • 2 tsp. mustard
  • 3 Tbsp. water
  • 1 tsp. cornstarch
  • 1½ Tbsp. low-fat buttery spread
  • ½ cup limes, sliced

Directions

  • Spray skillet with nonstick spray. Add chicken to skillet. Sear one side, 5 minutes, then flip. In a small bowl, mix remaining ingredients except lime slices. Pour mixture over chicken and cook on medium for 10 minutes more. Serve with sliced limes.
