Chili Grilled Corn
There’s an old saying about fresh sweet corn: Stroll down to the garden to pick it, but run back to the kitchen to cook it. Corn begins to convert its sugars into starches the second it is picked; for the sweetest corn, freshest is best.

- 6 large ears sweet corn
- 6 Tbsp. butter
- ¼ tsp. ground nutmeg
- 1 Tbsp. chili powder
- Pull back corn husks but leave attached at bottom. Remove silk. Spread each cob with 1 tablespoon butter.
- In small bowl, combine nutmeg and chili powder and mix well. Sprinkle evenly over each buttered cob; pull husks back over corn kernels. Tie closed, then cook on medium grill 4–6" from heat for 20–30 minutes until corn is tender.
