Chili Sloppy Joes
These can also be served over tortilla chips. For extra flavor, top with shredded Cheddar or Monterey Jack cheese before serving.

- 2 tsp. butter
- 1 medium yellow onion, peeled and chopped
- 2 lbs. ground beef
- 2 cups tomato sauce
- 4 Tbsp. tomato paste
- 1 cup water
- 1 tsp. ground cumin
- 1 Tbsp. chili powder
- 2 tsp. sugar
- 8 hamburger rolls
- Heat the butter over medium-high heat in a large skillet. Add the onion. Cook for 1 minute. Add the ground beef and sauté until browned, about 8 minutes. Drain off any excess fat.
- Add the tomato sauce, tomato paste, and water. Mix thoroughly and stir in the ground cumin, chili powder, and sugar. Bring to a boil.
- Cover, reduce heat to low, and simmer for 25 minutes until heated thoroughly. Spoon the meat mixture over the hamburger rolls.
