Chilled Cucumber Soup

Ingredients

  • 2 large cucumbers, sliced
  • 2 scallions, trimmed and coarsely chopped
  • 1 garlic clove, peeled
  • 1 cup plain low-fat yogurt
  • 4 Tbsp. fresh dill
  • 1 tsp. salt
  • ½ tsp. ground black pepper

Directions

  • Combine the ingredients in the work bowl of a food processor or blender until smooth.
  • Chill 1 hour or more and garnish with additional dill as desired.
