Chilled Cucumber Soup

- 2 large cucumbers, sliced
- 2 scallions, trimmed and coarsely chopped
- 1 garlic clove, peeled
- 1 cup plain low-fat yogurt
- 4 Tbsp. fresh dill
- 1 tsp. salt
- ½ tsp. ground black pepper
- Combine the ingredients in the work bowl of a food processor or blender until smooth.
- Chill 1 hour or more and garnish with additional dill as desired.
