Chilled Lobster Salad

This recipe can be scaled up for more people by using 1/2 lobster for each person. Lobsters can be cooked by the seafood department of most supermarkets.

Ingredients

  • 2 cups baby mixed salad greens
  • 1 cooked and shelled lobster, chilled
  • ¼ cup white wine vinaigrette
  • ½ cup mayonnaise
  • 5 chopped fresh basil leaves

Directions

  • Toss greens and lobster meat with vinaigrette, divide evenly, and arrange on plates.
  • Mix together mayonnaise and basil. Spoon mayonnaise mixture onto plates for dipping.
