Chimichurri Marinade

The cayenne adds a great kick—adjust the amount of cayenne and add a little orange juice and a hint of sugar substitute if you want to tone down the heat.

  • ½ cup olive oil
  • ¾ cup sherry vinegar
  • 2 Tbsp. paprika
  • 1 Tbsp. cayenne pepper
  • 4 garlic cloves, minced
  • ¼ cup diced red onion
  • 2 tsp. dried oregano
  • 2 bay leaves, broken in several pieces
  • 1 tsp. kosher salt

  • Combine all the ingredients in a glass bowl and mix well.
