Chocolate Frozen Pudding
It’s hard to believe that something that tastes this rich is actually low in fat; but it is. Serve this with marshmallow topping for a great dessert.

- 1 package (3 oz.) instant chocolate pudding mix
- 1⁄4 cup sugar
- 1 Tbsp. cocoa powder
- 1⁄8 tsp. salt
- 1 can (13 oz.) evaporated skim milk
- 2⁄3 cup 1% milk
- 2 tsp. butter, melted
- 1⁄2 tsp. vanilla extract
- In a medium bowl, combine pudding mix, sugar, cocoa powder, and salt. Add evaporated milk, 1% milk, melted butter, and vanilla and beat until blended.
- Pour into ice cream maker and freeze according to manufacturer’s instructions. Freeze for 3 hours before serving.
