Chocolate Fudge Sheet Cake

  • 1⁄2 cup boiling water
  • 1⁄2 cup cocoa powder
  • 2 cups cake flour
  • 1 tsp. soda
  • 1 tsp. baking powder
  • 1⁄2 tsp. salt
  • 1⁄2 cup vegetable shortening
  • 1 1⁄2 cups sugar
  • 2 large eggs, separated
  • 1 tsp. vanilla extract
  • 3⁄4 cup buttermilk


  • Preheat oven to 350°F.
  • Add the boiling water to the cocoa and make a smooth paste; set aside and allow to cool.
  • Sift together the flour, soda, baking powder, and salt, and set aside.
  • Cream together the shortening and sugar, beating until light and fluffy. Add the egg yolks and vanilla and beat well, then stir in the vanilla. Add the flour mixture alternately with the milk, beating well after each addition. Stir in the cocoa mixture, combining well.
  • Beat the egg whites until stiff peaks form, then fold them into the batter. Turn into a greased and floured 9-by-13-inch pan and bake about 45 minutes.
