Chocolate Tofu Pudding
This very easy-to-make pudding tastes like an extravagantly decadent mousse with loads of cream, but its rich texture—and extra protein—comes from tofu. Be sure to use the “cook-and-serve” pudding, not the instant type.

- 2 cups soy milk
- 1½ cups silken firm tofu
- 2 boxes (1.3 oz.) sugar-free and fat-free chocolate pudding mixture
- Combine the milk, tofu, and pudding mixture in a blender and process until smooth. Pour the mixture into a saucepan. Heat slowly over medium-low heat, stirring constantly, until the mixture thickens.
- Remove from the heat and pour into a heatproof bowl. Chill until ready to serve.
