Chops with Mint and Garlic

This recipe tastes best cooked on the grill; the wood smoke adds another layer of flavor to this simple dish.

Ingredients

  • 3 Tbsp. minced fresh mint
  • 1 Tbsp. minced garlic
  • 2 Tbsp. olive oil
  • 1 Tbsp. lemon juice
  • 4 pork chops (4 oz.)
  • ⅛ tsp. salt
  • ⅛ tsp. white pepper

Directions

  • Prepare and preheat grill. In small bowl, combine mint, garlic, olive oil, and lemon juice and mix well.
  • Sprinkle pork chops with salt and pepper. Brush with sauce and place on grill. Grill 6" from medium coals for 5–6 minutes per side until internal temperatures reach 155°F, brushing with mint sauce. Discard any remaining mint sauce. Let chops stand for 5 minutes, then serve.
