Chops with Mint and Garlic
This recipe tastes best cooked on the grill; the wood smoke adds another layer of flavor to this simple dish.

- 3 Tbsp. minced fresh mint
- 1 Tbsp. minced garlic
- 2 Tbsp. olive oil
- 1 Tbsp. lemon juice
- 4 pork chops (4 oz.)
- 1⁄8 tsp. salt
- 1⁄8 tsp. white pepper
- Prepare and preheat grill. In small bowl, combine mint, garlic, olive oil, and lemon juice and mix well.
- Sprinkle pork chops with salt and pepper. Brush with sauce and place on grill. Grill 6 inches from medium coals for 5 to 6 minutes per side until internal temperatures reach 155°F, brushing with mint sauce. Discard any remaining mint sauce. Let chops stand for 5 minutes, then serve.
