Chorizo Slow Cooker Beans

This twist on barbecue beans is made with chorizo, peppers and onions finished with fresh cilantro and lime juice.

Ingredients

  • 1 pound chorizo sausage, cooked, crumbled and fat drained
  • 1⁄2 pound dried pinto beans, picked through and rinsed
  • 1⁄2 pound dried black beans, picked through and rinsed
  • 4 cups chicken stock
  • 1 can (14.5 oz.) tomatoes and green chilies
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 tablespoon garlic, minced
  • 1 tablespoon cumin
  • 1 tablespoon chili power
  • 1⁄4 cup lime juice
  • 1⁄4 cup cilantro, chopped
  • 1 teaspoon salt
  • 1⁄2 teaspoon pepper

Directions

  • Place all ingredients except lime juice, cilantro, salt and pepper in a 5-quart or larger slower cooker; stir to combine. Cover and cook on high 7-8 hours until beans are cooked through.
  • Add lime juice and cilantro; adjust seasoning to taste.
  • Refrigerate leftovers.
