Chorizo Slow Cooker Beans
This twist on barbecue beans is made with chorizo, peppers and onions finished with fresh cilantro and lime juice.

Ingredients
- 1 pound chorizo sausage, cooked, crumbled and fat drained
- 1⁄2 pound dried pinto beans, picked through and rinsed
- 1⁄2 pound dried black beans, picked through and rinsed
- 4 cups chicken stock
- 1 can (14.5 oz.) tomatoes and green chilies
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 tablespoon garlic, minced
- 1 tablespoon cumin
- 1 tablespoon chili power
- 1⁄4 cup lime juice
- 1⁄4 cup cilantro, chopped
- 1 teaspoon salt
- 1⁄2 teaspoon pepper
Directions
- Place all ingredients except lime juice, cilantro, salt and pepper in a 5-quart or larger slower cooker; stir to combine. Cover and cook on high 7-8 hours until beans are cooked through.
- Add lime juice and cilantro; adjust seasoning to taste.
- Refrigerate leftovers.
