Chunky Tomato Sauce

Ingredients

  • 2 lbs. very ripe tomatoes
  • 2 Tbsp. extra-virgin olive oil
  • 2 cloves garlic, minced
  • 1½ tsp. Italian seasoning
  • 1 bay leaf
  • 1 tsp. salt
  • ½ tsp. black pepper

Directions

  • Peel and seed tomatoes; chop with knife or food processor.
  • Heat large skillet over medium heat and add olive oil. Reduce heat to low, add the garlic and Italian seasoning, and sauté.
  • Add tomatoes, bay leaf, and salt and pepper. Simmer, uncovered, over medium heat for 8–10 minutes, stirring often; reduce heat to maintain a simmer, if necessary. Simmer until tomatoes are soft and sauce has thickened, about 30 minutes.
  • Discard bay leaf; adjust seasoning to taste.
