Cilantro Lime Brown Rice

Ingredients
- 1 tablespoon olive oil
- 1⁄2 cup yellow onion, chopped
- 2 cloves garlic, minced
- 2 teaspoons Cumin
- 2 tablespoons lime juice
- 1 cup Lundberg® California Brown Basmati Rice
- 2 cups water
- 1 teaspoon salt
- 2 tablespoons cilantro, chopped
Directions
- In a large saucepan, heat olive oil and sauté the onions until tender. Add the garlic, cumin, lime juice and rice. Sauté 3-4 minutes, then add the water and salt.
- Allow the rice to simmer with a lid on low for 35-40 minutes, until rice is tender.
- Stir in the cilantro and serve.
- Refrigerate leftovers.
