Cilantro Lime Brown Rice

Ingredients

  • 1 tablespoon olive oil
  • 1⁄2 cup yellow onion, chopped
  • 2 cloves garlic, minced
  • 2 teaspoons Cumin
  • 2 tablespoons lime juice
  • 1 cup Lundberg® California Brown Basmati Rice
  • 2 cups water
  • 1 teaspoon salt
  • 2 tablespoons cilantro, chopped

Directions

  • In a large saucepan, heat olive oil and sauté the onions until tender. Add the garlic, cumin, lime juice and rice. Sauté 3-4 minutes, then add the water and salt.
  • Allow the rice to simmer with a lid on low for 35-40 minutes, until rice is tender.
  • Stir in the cilantro and serve.
  • Refrigerate leftovers.
