Cinnamon-Raisin Muffins

A classic combination of cinnamon and raisins makes this muffin a delight to eat!

Ingredients

  • 2 cups all-purpose flour
  • ¼ tsp. salt
  • 1 tsp. baking powder
  • ¼ tsp. baking soda
  • 1 tsp. ground cinnamon
  • ½ cup canola oil
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 1 Tbsp. plain soy yogurt
  • 1 tsp. vanilla extract
  • 1 cup raisins

Directions

  • Preheat oven to 375°F.
  • In a large bowl, whisk together the flour, salt, baking powder, baking soda, and cinnamon. In a separate bowl, whisk oil, granulated sugar, brown sugar, yogurt, and vanilla extract until well blended. Add wet ingredients to the flour mixture, stirring until just mixed. Fold in the raisins.
  • Pour batter into greased or paper-lined muffin tins until ⅔ full. Bake 20–25 minutes, or until a toothpick comes out clean when inserted into the center of the muffins and the tops are golden brown. Allow to cool 15 minutes in pans, then transfer to wire racks.
