Cinnamon-Raisin Muffins

Ingredients
- 2 cups all-purpose flour
- 1⁄4 tsp. salt
- 1 tsp. baking powder
- 1⁄4 tsp. baking soda
- 1 tsp. ground cinnamon
- 1⁄2 cup canola oil
- 1⁄2 cup granulated sugar
- 1⁄4 cup brown sugar
- 1 Tbsp. plain soy yogurt
- 1 tsp. vanilla extract
- 1 cup raisins
Directions
- Preheat oven to 375°F.
- In a large bowl, whisk together the flour, salt, baking powder, baking soda, and cinnamon. In a separate bowl, whisk oil, granulated sugar, brown sugar, yogurt, and vanilla extract until well blended. Add wet ingredients to the flour mixture, stirring until just mixed. Fold in the raisins.
- Pour batter into greased or paper-lined muffin tins until 2⁄3 full. Bake 20 to 25 minutes, or until a toothpick comes out clean when inserted into the center of the muffins and the tops are golden brown. Allow to cool 15 minutes in pans, then transfer to wire racks.
