Citrus Compote
Compote gets better with age, so feel free to make it the day before, and then just spoon it over a bowl of yogurt for breakfast.

Ingredients
- 2 oranges
- 2 grapefruits
- 4 mandarin oranges
- 1⁄2 cup granulated sugar
- 1 vanilla bean
Directions
- Zest 1 orange and put the zest in a medium saucepan. Peel and section the oranges, grapefruit, and mandarin oranges and place in a bowl, adding their juice to the saucepan. Split the vanilla bean pod and scrape out the seeds into the saucepan (reserve the pod).
- Heat the juice (it should be approximately 1⁄2 cup; add water if necessary) with the orange zest, sugar, vanilla seeds, and pod until boiling. Stir until the sugar dissolves, then reduce heat and simmer for 2 minutes. Remove from heat and allow to cool.
- Discard the vanilla pod and toss the syrup with reserved fruit.
