Citrus Pico de Gallo

Pico de gallo means “beak of the rooster.” This may refer to the sound the knife makes chopping up the vegetables or the fact that the peppers “peck” at your tongue. At any rate, this fresh sauce is a delicious Tex-Mex staple.

Ingredients

  • 3 ripe red tomatoes
  • 2 ripe golden tomatoes
  • ½ sweet onion
  • 2 Tbsp. lemon juice
  • 1 Tbsp. orange juice
  • 1 jalapeño pepper
  • ¼ cup chopped fresh parsley
  • 1 tsp. salt
  • ⅛ tsp. cayenne pepper

Directions

  • Cut tomatoes in half, seed them, then cut into small pieces. Dice onion and combine with tomatoes in a medium bowl. Sprinkle with lemon and orange juice.
  • Seed and dice jalapeño pepper. Add to tomato mixture along with parsley. Sprinkle with salt and cayenne pepper and toss to coat. Serve immediately and store leftovers, covered, in refrigerator.
