Citrus Raspberry Popovers

The sweetness of raspberries is the perfect accompaniment to tangy orange. You could certainly choose to top these with maple syrup or a nice raspberry syrup, but a cream cheese glaze would also be more than welcome.

  • 3 Tbsp. butter
  • 3 large eggs
  • 1 cup milk
  • 2 tsp. vanilla
  • 2 Tbsp. grated orange zest
  • 4 Tbsp. orange juice
  • 1⁄3 cup sugar
  • 1 cup all-purpose flour
  • 1⁄8 tsp. salt
  • 1 cup raspberries
  • 3⁄4 cup maple syrup


  • Preheat oven to 375°F.
  • Cut butter into 12 pieces and place one piece in each well of a popover pan or large muffin tin. Place the pan in the oven for 3 to 5 minutes.
  • In medium bowl, beat eggs with milk, vanilla, zest, juice, and sugar, then whisk in flour and salt. Pour the batter into the buttered cups, then evenly add a few berries to each cup.
  • Return to oven for 5 minutes, then reduce the temperature to 350°F and continue to bake for another 20 minutes.
  • Drizzle with syrup before serving
