Classic Baked Custard

- 3 large eggs, lightly beaten
- 1⁄4 cup sugar
- 1⁄4 tsp. salt
- 2 cups milk, scalded and cooled slightly
- 1 tsp. vanilla extract
- 1⁄4 tsp. ground nutmeg
- Preheat oven to 325°F.
- In a bowl, combine the eggs, sugar, and salt and beat until well mixed. Slowly stir in the milk, vanilla, and nutmeg. Set 6 custard cups (5 ounces each) in a baking pan. Pour hot water into the baking pan to a depth of 1 inch. Pour the custard into the cups.
- Bake for 40 to 45 minutes, or until a knife inserted halfway between the outside edge and the center comes out clean. Serve warm or chilled.
