Clean-out-the-fridge Grain Bowl
Grain bowls are a great way to use up all your leftovers. Plus, this meal comes together with any bottled or homemade dressing.

Ingredients
- 1 cup cooked grains (quinoa, rice or farro)
- 1 cup roasted vegetables (sweet potatoes, broccoli or carrots)
- 1 cup cooked protein (tofu, chickpeas or chicken)
- 4 cups finely shredded cabbage or kale
- Your favorite dressing
- Optional toppings: avocado, chopped apple, toasted nuts, sunflower seeds, fresh herb
Directions
- In large bowl, combine grains, vegetables, protein, and cabbage or kale.
- Add your favorite dressing, to taste, and toss until well coated.
- Add optional toppings and serve immediately, refrigerating any leftovers.
