Ingredients

  • 8 slices Simple Truth™ Uncured Hickory Smoked Bacon
  • 8 slices white bread 1 tomato, thinly sliced
  • 1 avocado, pitted and thinly sliced
  • 1 tomato, thinly sliced
  • 1 cup Simple Truth™ Chicken Breast Strips, thawed
  • 1⁄2 cup ranch dressing
  • 2 Simple Truth™ Natural Cage Free Grain Fed Grade A Large White Eggs, hard-boiled and chopped
  • 4 blue cheese slices
  • 1 cup Simple Truth Organic™ Baby Spring Mix

Directions

  • In a medium skillet, cook bacon over medium heat until crisp. Cool on a plate lined with a paper towel.
  • Lightly toast bread.
  • Divide the following among 4 bread slices: avocado, bacon, tomato and chicken. Top with eggs, drizzle ranch dressing and complete sandwich with blue cheese slices and lettuce.
