Cobb Sandwiches

The classic salad also makes a delicious sandwich. Keep the sugar out with a few select ingredients like sugar-free bread, bacon and mayonnaise.

Ingredients

  • 4 tbsp. no-sugar-added mayonnaise
  • 3 tbsp. blue cheese crumbles
  • 1⁄2 tsp. hot pepper sauce
  • 1⁄4 tsp. ground black pepper
  • 8 slices Private Selection™ Sugar-free Whole Wheat Sliced Wide Pan Bread
  • 4 leaves green leaf lettuce
  • 1 large tomato, sliced
  • 8 oz. cooked chicken breast, sliced
  • 2 hardboiled eggs, sliced
  • 4 slices Simple Truth™ No-sugar Uncured Hardwood Smoked Bacon, cooked
  • 1 ripe avocado, sliced

Directions

  • In a small bowl, stir together mayonnaise, blue cheese crumbles, hot pepper sauce and pepper.
  • Spread 1 side of each slice of bread with blue cheese spread.
  • Top 4 slices of bread with lettuce, tomato, chicken, egg, bacon and avocado. Top with remaining bread slices, spread-side down.
  • Refrigerate leftovers.
