Coconut Butter
You can make this spread using just the coconut meat and oil, for a lightly sweet flavor. The addition of 1 teaspoon minced garlic produces a classic garlic butter. Both variations are good as a spread on crackers, flat bread, or corn on the cob. Without the garlic, this can also be used in dessert recipes as a cream.

Ingredients
- 1⁄2 cup coconut oil
- 2 cups young coconut meat
- 1⁄4 tsp. kosher salt
Directions
- Place the jar of coconut oil in warm water until it becomes liquid.
- Add all ingredients to a blender and blend together until smooth.
- Place the mixture in a storage container and refrigerate for 1 hour until it becomes solid.
