Coconut Chia Pudding
Chia seeds are a nutritional powerhouse. A single ounce of chia seeds contains 11 g of fiber—almost half your needs for the entire day. The tiny seeds are also loaded with protein and omega-3 fatty acids as well as a combination of vitamins and minerals.

- 1 cup coconut milk
- 1 cup almond milk
- 1 tsp. vanilla extract
- 1 Tbsp. raw honey
- 2 Tbsp. unsweetened coconut flakes
- ½ cup chia seeds
- Blend coconut milk, almond milk, vanilla extract, and honey in blender.
- Add coconut flakes and chia seeds to mixture and stir until evenly dispersed. Divide into individual containers, cover and refrigerate for 8 hours.
