Coconut Chia Pudding

Ingredients

  • 1 can (13.5 oz.) unsweetened coconut milk
  • 1⁄3 cup chia seeds
  • 1⁄3 cup maple syrup
  • 1⁄4 tsp. salt
  • 1⁄2 tsp. vanilla
  • 1⁄3 cup toasted coconut
  • 1⁄2 cup whipped cream
  • 1⁄2 cup raspberries

Directions

  • Combine coconut milk, chai seeds, maple syrup, salt, and vanilla in a medium bowl. Cover and refrigerate for at least 4 hours.
  • Remove from refrigerator, stir, and serve with whipped cream, toasted coconut, and raspberries.
