Coconut Chia Pudding
This creamy chia seed pudding is packed with healthy fats and is a great way to refuel at snack time.

- 1 can (13.5 oz.) unsweetened coconut milk
- 1⁄3 cup chia seeds
- 1⁄3 cup maple syrup
- 1⁄4 tsp. salt
- 1⁄2 tsp. vanilla
- 1⁄3 cup toasted coconut
- 1⁄2 cup whipped cream
- 1⁄2 cup raspberries
- Combine coconut milk, chai seeds, maple syrup, salt, and vanilla in a medium bowl. Cover and refrigerate for at least 4 hours.
- Remove from refrigerator, stir, and serve with whipped cream, toasted coconut, and raspberries.
