These crepes can be filled with a variety of ingredients.

- 3⁄4 cup coconut flour
- 6 large eggs
- 1⁄2 cup coconut oil
- 1⁄2 tsp. baking powder
- 1⁄4 tsp. sea salt
- 2⁄3 cup coconut milk
- nonstick cooking spray
- In a food processor, mix flour, eggs, coconut oil, baking powder, and salt until a thick batter forms.
- Add coconut milk; mix well.
- Heat a 12-inch nonstick skillet over medium. Spray with cooking spray.
- Pour batter 1⁄4 cup at a time onto skillet and tilt to cover entire surface. Cook until the bottom is golden brown, 2 minutes, then flip and cook for an additional 1 minute. Repeat process for remaining batter.
