Coconut-Crusted Fish

  • 1⁄2 cup shredded unsweetened coconut
  • 1⁄2 cup gluten-free panko bread crumbs
  • 1⁄8 tsp. salt
  • 1⁄2 tsp. paprika
  • 1 large egg
  • 1 lb. cod fillets


  • Preheat oven to 400°F.
  • In a medium bowl, mix together coconut, bread crumbs, salt, and paprika. In a separate small bowl whisk egg. Dredge fish fillets in egg, then coconut-panko mixture.
  • Place in a baking pan and bake 12 minutes or until firm.
