- 1⁄2 cup shredded unsweetened coconut
- 1⁄2 cup gluten-free panko bread crumbs
- 1⁄8 tsp. salt
- 1⁄2 tsp. paprika
- 1 large egg
- 1 lb. cod fillets
- Preheat oven to 400°F.
- In a medium bowl, mix together coconut, bread crumbs, salt, and paprika. In a separate small bowl whisk egg. Dredge fish fillets in egg, then coconut-panko mixture.
- Place in a baking pan and bake 12 minutes or until firm.
