Coconut Dip with Berries
This dessert is light and fresh and easy to throw together at a moment’s notice. You can substitute other seasonal fruits in place of the berries.

- 1 can (13.6 oz.) full-fat coconut milk
- 1 tsp. granulated stevia
- 1⁄4 tsp. vanilla extract
- 1 1⁄2 Tbsp. lemon juice
- 1⁄4 cup sliced strawberries
- 1⁄4 cup blueberries
- 1⁄4 cup raspberries
- 1⁄4 cup blackberries
- Refrigerate coconut milk for at least 8 hours. When coconut milk is thoroughly chilled, scoop out the cream that forms on top of the liquid.
- Put cream in a medium bowl and beat with a handheld mixer 3 minutes. Fold in stevia and vanilla. Squeeze lemon juice over berries. Serve dip alongside berries.
