Coconut Dip with Berries

This dessert is light and fresh and easy to throw together at a moment’s notice. You can substitute other seasonal fruits in place of the berries.

Ingredients

  • 1 can (13.6 oz.) full-fat coconut milk
  • 1 tsp. granulated stevia
  • 1⁄4 tsp. vanilla extract
  • 1 1⁄2 Tbsp. lemon juice
  • 1⁄4 cup sliced strawberries
  • 1⁄4 cup blueberries
  • 1⁄4 cup raspberries
  • 1⁄4 cup blackberries

Directions

  • Refrigerate coconut milk for at least 8 hours. When coconut milk is thoroughly chilled, scoop out the cream that forms on top of the liquid.
  • Put cream in a medium bowl and beat with a handheld mixer 3 minutes. Fold in stevia and vanilla. Squeeze lemon juice over berries. Serve dip alongside berries.
