Coconut Flour Pancakes
Cooking with gluten-free flours can be intimidating, but the sweet taste of coconut flour in these pancakes proves that even gluten-free pancakes can be delicious.

- 2 large whole eggs
- 2 egg whites
- 3 Tbsp. butter
- 3 Tbsp. whole milk
- 1½ tsp. maple syrup
- 1 tsp. sea salt
- ¼ cup coconut flour
- ½ tsp. baking powder
- 1 tsp. vanilla extract
- In a large bowl, use a wire whisk to mix together the eggs and egg whites, butter, milk, maple syrup, and salt.
- Add the coconut flour and baking powder, whisking until thoroughly mixed. Add the vanilla. Stir to combine thoroughly.
- Heat a skillet over medium heat with just enough butter to coat lightly.
- Spoon 2–3 tablespoons of batter onto the skillet, making the pancakes about 3–4" in diameter. Cook for 3–5 minutes, turning once.
