Coconut Ice Cream (Ai Tim Kati)
This ice cream is a good base for making other ice cream flavors. And it is rich and delicious without the dairy of traditional ice cream.

- ⅔ cup coconut cream
- 1 cup coconut milk
- ¼ cup packed dark brown sugar
- ⅛ tsp. salt
- In a medium-size saucepan, bring all the ingredients to a boil.
- Reduce the heat to low and simmer gently for 5 minutes, stirring occasionally. Remove from heat, and chill the mixture thoroughly.
- Once chilled, freeze in your ice cream maker according to the manufacturer’s directions.
