Coconut Ice Cream (Ai Tim Kati)

This ice cream is a good base for making other ice cream flavors. And it is rich and delicious without the dairy of traditional ice cream.

  • ⅔ cup coconut cream
  • 1 cup coconut milk
  • ¼ cup packed dark brown sugar
  • ⅛ tsp. salt


  • In a medium-size saucepan, bring all the ingredients to a boil.
  • Reduce the heat to low and simmer gently for 5 minutes, stirring occasionally. Remove from heat, and chill the mixture thoroughly.
  • Once chilled, freeze in your ice cream maker according to the manufacturer’s directions.
