Coconut and Lime Vinaigrette

This refreshing dressing also makes an excellent marinade for fish.

Ingredients

  • 1 cup coconut milk
  • 3 Tbsp. lime juice
  • 2 Tbsp. chopped cilantro
  • 2 Tbsp. rice vinegar
  • 1⁄4 cup vegetable oil
  • 1 Tbsp. soy sauce
  • 1⁄4 cup honey
  • 1⁄4 tsp. ground ginger
  • 2 scallions, sliced

Directions

  • Place all ingredients in a blender and blend on high until emulsified. Refrigerate 1 hour to allow flavors to meld.
