Coconut Milk (Kati)

Coconut milk can be purchased in a can or made with shredded coconut meat.

  • 2 cups frozen shredded coconut meat
  • 4 cups water


  • In a large bowl, add enough water to coconut meat to cover. Squeeze the meat with your hands until the liquid becomes white and thick. Strain through a fine mesh strainer. This first round of the liquid is called coconut cream or the “head" of coconut milk.
  • Repeat the process by adding more water to cover the coconut meat. Strain the second round of liquid. This second round of liquid is called coconut milk or the “tail" of coconut milk. When making dessert, most often, only the head is used. When making curries, both the head and tail are used. Store-bought coconut milk is a mixture of head and tail.
