Coconut Rice Pudding
Evaporated milk gives this rice pudding an amazingly creamy texture without the fat of whole milk or cream.

- ¾ cup long-grain rice
- 3½ cups fat-free evaporated milk
- ⅔ cup sugar
- ⅓ cup unsweetened shredded coconut
- ½ tsp. vanilla extract
- ¼ tsp. salt
- 2 tsp. shredded orange peel, divided
- ¼ tsp ground nutmeg
- Place rice, evaporated milk, sugar, coconut, vanilla, salt, and ¼ teaspoon orange peel into a 4-quart slow cooker. Stir. Cook on low for 5 hours. Stir. Top with nutmeg and remaining orange peel.
