Coconut Rice Pudding

Evaporated milk gives this rice pudding an amazingly creamy texture without the fat of whole milk or cream.

Ingredients

  • ¾ cup long-grain rice
  • 3½ cups fat-free evaporated milk
  • ⅔ cup sugar
  • ⅓ cup unsweetened shredded coconut
  • ½ tsp. vanilla extract
  • ¼ tsp. salt
  • 2 tsp. shredded orange peel, divided
  • ¼ tsp ground nutmeg

Directions

  • Place rice, evaporated milk, sugar, coconut, vanilla, salt, and ¼ teaspoon orange peel into a 4-quart slow cooker. Stir. Cook on low for 5 hours. Stir. Top with nutmeg and remaining orange peel.
