- 1 cup water
- 1 can (14 oz.) coconut milk
- 1½ cups white rice
- ⅓ cup coconut flakes
- 1 tsp. lime juice
- ½ tsp. salt
- In a large pot, combine the water, coconut milk, and rice and bring to a simmer. Cover and allow to cook 20 minutes, or until rice is done.
- In a separate skillet, toast the coconut flakes over low heat until lightly golden, about 3 minutes. Gently stir constantly to avoid burning. Combine coconut flakes with cooked rice and stir in lime juice and salt.
