Coconut-Scented Rice

Replacing the water with other liquids such as chicken stock or coconut milk provides an easy and flavorful alternative to your dish.

  • ¾ cup coconut milk
  • ¾ cup water
  • 1 cup long-grain rice
  • ¼ tsp. salt


  • Bring the coconut milk, water, salt, and rice to a boil in a saucepan over medium heat. When the water is boiling, partially cover and lower the heat to medium low. Cook for approximately 15 minutes or until most of the liquid is absorbed.
  • Cover and continue cooking on low heat for 3–5 minutes or until the liquid is fully absorbed. Remove the rice from the heat and let sit, covered, for 5 minutes. Use a fork to fluff the rice before serving.
