Ingredients

  • 20 pounds collard greens
  • 2 onions, julienned
  • 1 1⁄2 cups brown sugar
  • 1⁄2 pound butter
  • 24 ounces sparkling water
  • 10 whole garlic cloves, chopped
  • 1⁄4 cup smoked paprika
  • 2 tablespoons garlic salt
  • 1⁄4 cup sriracha
  • 2 cups apple cider vinegar

Directions

  • Wash collard greens.
  • Chop collard greens 1” wide.
  • Mix all ingredients and bring to a boil (fold in greens as they cook down).
  • Cook on low flame (about 1 hr ½) turning every 10-15 minutes until soft.
