Compound Butter

You can use parchment paper instead of plastic wrap or wax paper. Use any herbs and spices that are on hand.

  • 1 lb. unsalted butter, softened at room temperature
  • 1 bunch parsley, chopped
  • 8 cloves garlic, minced
  • 1⁄2 tsp. salt
  • 1⁄2 freshly cracked black pepper


  • In a medium-size bowl, thoroughly mix together the butter, parsley, garlic, salt and pepper.
  • Spread onto wax paper or plastic wrap, and wrap tightly. Freeze completely, then slice into small pats.
