Condensed Cream-of-Mushroom Soup (Mock Mushroom Sauce)
Use this soup as you would regular cream-of-mushroom soup in any casserole preparation.

Makes: 1 cup
- ¾ cup minced mushrooms
- ½ cup water
- ⅛ cup Ener-G potato flour
- 1 tsp. chopped onion
- 1 Tbsp. chopped celery
- In a covered microwave-safe container, microwave the chopped mushrooms, onion, and celery for 2 minutes or until tender. Reserve any resulting liquid from the steamed mushrooms and then add enough water to equal 1 cup.
- Place all the ingredients in a blender and process.
