- 1 1⁄2 cups corn kernels
- 1 egg
- 1⁄2 cup queso fresco, diced
- 1⁄2 cup vegetable oil
- Process the corn kernels with 1⁄4 cup water in a blender. It does not need to be completely smooth. Add the egg and process a few seconds longer. Transfer to a bowl and add the diced cheese.
- Heat the oil in a frying pan over medium heat. Add 2 tablespoons of the corn mixture and fry, about 2 minutes per side, until golden. Serve hot.
