Cornish Hen with Orange Glaze

Pineapple makes a yummy glaze for these birds, too. Mix the juice from a can of chopped pineapple with the butter and pour over hens.

  • 4 Cornish hens (1 1⁄2 lbs.), washed and dried
  • 3 Tbsp. butter, melted
  • 1 jar (10 oz.) orange marmalade
  • 2 tsp. rosemary leaves


  • Preheat oven to 350°F.
  • Bake hens for 30 minutes.
  • Melt the butter and marmalade in a microwave for 10 seconds. Stir in rosemary. Pour marmalade mixture over hens and bake for another hour, basting several times.
