Cornmeal Hush Puppies

These savory cornmeal dumplings are a staple in the American South where they are served with fried catfish and in some places on barbecue plates. They are delicious on their own or with a dipping sauce.

Ingredients

  • 2 cups yellow corn meal
  • 1 cup all-purpose flour
  • 2 tsp. brown sugar
  • ¾ tsp. salt
  • ½ tsp. black pepper
  • 1 tsp. baking powder
  • ¾ tsp. baking soda
  • 2 eggs
  • 1 cup milk
  • 2 Tbsp. bacon fat
  • ¾ cup frozen corn
  • 4 cups peanut oil

Directions

  • Combine the dry ingredients in a large bowl. Whisk the eggs, milk, bacon fat, and corn in a small bowl. Make a well in the center of the dry ingredients and pour in the wet. Fold the dry into the wet to get a sticky dough.
  • Place a Dutch oven or chicken fryer over medium-high heat. There should be 2" of oil in the pan. Once the oil is hot, drop tablespoons of the dough into the oil. Cook until they are brown on the first side and flip over. They should float when they’re done. Place them on paper towels to drain and sprinkle with salt. Serve warm.
