Cottage Cheese and Fruit Salad
This simple salad makes an easy side dish for 4, or a quick midday meal for 2.

- 2 cups cottage cheese
- 1 tsp. ground cinnamon
- ½ tsp. ground nutmeg
- 1 large red apple, cored and thinly sliced
- 2 Tbsp. apple juice
- ½ tsp. salt
- ¼ tsp. ground black pepper
- Combine all ingredients in a medium mixing bowl. Cover bowl with plastic wrap and chill until ready to serve.
