Cottage Cheese and Fruit Salad

This simple salad makes an easy side dish for 4, or a quick midday meal for 2.

Ingredients

  • 2 cups cottage cheese
  • 1 tsp. ground cinnamon
  • ½ tsp. ground nutmeg
  • 1 large red apple, cored and thinly sliced
  • 2 Tbsp. apple juice
  • ½ tsp. salt
  • ¼ tsp. ground black pepper

Directions

  • Combine all ingredients in a medium mixing bowl. Cover bowl with plastic wrap and chill until ready to serve.
