Cottage Cheese Oatmeal Pancakes
These multi-grain pancakes are moist and delicious thanks to the unusual addition of cottage cheese.

- 1⁄3 cup quick oatmeal
- 4 large eggs
- 1 cup small curd cottage cheese
- 2 Tbsp. orange juice
- 3⁄4 cup whole-wheat flour
- 1 tsp. baking soda
- 3 Tbsp. sugar
- 1⁄4 tsp. salt
- 2 Tbsp. butter
- In a blender or food processor, grind oatmeal until fine; remove. Add eggs, cottage cheese, and orange juice to blender and blend until mixed. Add oatmeal, flour, baking soda, sugar, and salt and blend just until smooth.
- Heat a large skillet over medium heat until a drop of water sizzles on it. Add butter and melt; spread evenly. Pour batter by 1⁄4 cup portions onto skillet, four at a time. Cook until edges look dry and bubbles form on surface and begin to break, about 3 to 4 minutes. Carefully turn with a spatula and cook for 2 minutes on second side. Serve immediately.
