Cranberry Cornmeal Muffins

Masa harina is corn flour; it’s not the same as cornmeal. You can find it in the international foods aisle of the supermarket.

Ingredients

  • ½ cup cornmeal
  • ½ cup masa harina
  • 1 cup all-purpose flour
  • ¼ cup sugar
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 2 large eggs
  • ¼ cup canola oil
  • 1 cup nonfat buttermilk
  • 1 tsp. grated orange zest
  • 2 Tbsp. honey
  • 1 tsp. vanilla extract
  • ⅓ cup chopped cranberries
  • ⅓ cup dried cranberries

Directions

  • Preheat oven to 400°F. Line 12 muffin cups with paper liners and set aside.
  • In a large bowl, combine the cornmeal, masa harina, flour, sugar, baking powder, and baking soda and mix well.
  • In a small bowl, combine the egg, oil, buttermilk, orange zest, honey, and vanilla and beat to combine. Add to the dry ingredients and stir just until moistened. Add chopped and dried cranberries.
  • Fill muffin cups ⅔ full. Bake for 15–22 minutes, or until toothpick inserted in center comes out clean. Let cool on wire racks for 10 minutes before serving.
