Cranberry Nut Bread

  • 6 Tbsp. butter
  • 3⁄4 cup light brown sugar
  • 2 large eggs
  • 1 cup sour cream
  • 2 1⁄2 cups all-purpose flour
  • 1⁄8 tsp. cloves
  • 1 tsp. baking soda
  • 1 1⁄2 tsp. baking powder
  • 1⁄2 tsp. salt
  • 2 cups chopped fresh cranberries
  • 1 cup finely chopped walnuts


  • Preheat oven to 375°F. In a large mixing bowl, cream the butter and brown sugar until light and fluffy, then add eggs one at a time and beat until smooth. Add sour cream.
  • In a separate bowl, combine flour, cloves, baking soda, baking powder, and salt; stir half into the batter. Add the cranberries and remaining flour mixture and then fold in the nuts.
  • Butter and flour a medium-sized loaf pan. Spoon batter into the pan and bake in the center of the oven until well browned on top and a toothpick inserted in the center comes out clean, about 65 to 70 minutes. Cool in the pan for 10 minutes, then turn out on a wire rack to cool completely. Slice and serve.
