Cream Cheese and Chive Scramble
This is a simple recipe that kids also enjoy.

- 3 Tbsp. unsalted butter
- 1 Tbsp. shallots, minced
- 10 large eggs
- 4 oz. cream cheese, cut into bits and softened
- ¼ tsp. salt
- ⅛ tsp. black pepper
- ⅓ cup minced chives, divided
- Melt the butter in a medium-size nonstick sauté pan over medium heat. When the butter starts to foam, add the shallots; cook for about 2 minutes or until the shallots are tender.
- In a bowl, whisk together the eggs, cream cheese, salt and pepper, and half the chives. Pour the mixture into the sauté pan and cook over low heat, stirring, until cooked. Transfer to a plate and garnish with remaining chives.
