Cream Cheese and Chive Scramble

This is a simple recipe that kids also enjoy.

  • 3 Tbsp. unsalted butter
  • 1 Tbsp. shallots, minced
  • 10 large eggs
  • 4 oz. cream cheese, cut into bits and softened
  • ¼ tsp. salt
  • ⅛ tsp. black pepper
  • ⅓ cup minced chives, divided


  • Melt the butter in a medium-size nonstick sauté pan over medium heat. When the butter starts to foam, add the shallots; cook for about 2 minutes or until the shallots are tender.
  • In a bowl, whisk together the eggs, cream cheese, salt and pepper, and half the chives. Pour the mixture into the sauté pan and cook over low heat, stirring, until cooked. Transfer to a plate and garnish with remaining chives.
