Creamy Butternut Squash Pasta

Ingredients
- 1 package (16 oz.) Private Selection™ Italian Ziti Pasta
- 1 tbsp. olive oil
- 2 cups butternut squash, cubed
- 1 tbsp. fresh garlic, minced
- 2 tsp. Private Selection™ Dalmation Rubbed Sage
- 1 tsp. Private Selection™ Thyme Leaves
- 1 cup fresh spinach
- 1 1⁄2 cups heavy cream
- 1⁄4 cup Private Selection™ Parmesan Cheese Wedge, grated, plus more for topping
- Salt and pepper
- 3 tbsp. chopped walnuts
Directions
- Cook pasta according to package directions. Drain and set aside.
- Meanwhile, heat olive oil in a large skillet over medium heat. Saute squash until fork-tender; add garlic, sage and thyme. Let cook 1 additional minute.
- Fold in spinach and cream. Bring to a low simmer. Add Parmesan and season with salt and pepper. Fold in cooked pasta and toss until evenly coated. Once sauce has thickened, remove from heat.
- Divide pasta between bowls, then top with walnuts and grated Parmesan. Serve immediately and refrigerate any leftovers.
