Creamy Butternut Squash Pasta

Ingredients

  • 1 package (16 oz.) Private Selection™ Italian Ziti Pasta
  • 1 tbsp. olive oil
  • 2 cups butternut squash, cubed
  • 1 tbsp. fresh garlic, minced
  • 2 tsp. Private Selection™ Dalmation Rubbed Sage
  • 1 tsp. Private Selection™ Thyme Leaves
  • 1 cup fresh spinach
  • 1 1⁄2 cups heavy cream
  • 1⁄4 cup Private Selection™ Parmesan Cheese Wedge, grated, plus more for topping
  • Salt and pepper
  • 3 tbsp. chopped walnuts

Directions

  • Cook pasta according to package directions. Drain and set aside.
  • Meanwhile, heat olive oil in a large skillet over medium heat. Saute squash until fork-tender; add garlic, sage and thyme. Let cook 1 additional minute.
  • Fold in spinach and cream. Bring to a low simmer. Add Parmesan and season with salt and pepper. Fold in cooked pasta and toss until evenly coated. Once sauce has thickened, remove from heat.
  • Divide pasta between bowls, then top with walnuts and grated Parmesan. Serve immediately and refrigerate any leftovers.
