Creamy Lasagna Soup

Ingredients
- 1 pound ground sweet Italian sausage
- Coarse salt and freshly ground pepper, to taste
- 1 yellow onion, finely chopped
- 2 Simple Truth Organic™ Carrots, peeled and grated
- 4 garlic cloves, finely chopped
- 2 cups water
- 4 cups Simple Truth Organic™ Chicken Broth
- 1 can Simple Truth Organic™ Diced Tomatoes, undrained
- 8 lasagna noodles, broken into jagged pieces
- 1⁄2 cup shredded Parmesan cheese
- 1 cup heavy cream
Directions
- In a soup pot, heat the oil over medium-high heat. Add the meat, season with salt and pepper and cook until browned, 3-4 minutes.
- Stir in the onion, carrots and garlic and cook until softened, 5-7 minutes.
- Stir in water, the chicken broth and tomatoes; cover and bring to a boil.
- Add the pasta and cook until al dente, about 15 minutes. Stir in cream.
- Season with salt and pepper. Serve with Parmesan.
