Creamy Lasagna Soup

Ingredients

  • 1 pound ground sweet Italian sausage
  • Coarse salt and freshly ground pepper, to taste
  • 1 yellow onion, finely chopped
  • 2 Simple Truth Organic™ Carrots, peeled and grated
  • 4 garlic cloves, finely chopped
  • 2 cups water
  • 4 cups Simple Truth Organic™ Chicken Broth
  • 1 can Simple Truth Organic™ Diced Tomatoes, undrained
  • 8 lasagna noodles, broken into jagged pieces
  • 1⁄2 cup shredded Parmesan cheese
  • 1 cup heavy cream

Directions

  • In a soup pot, heat the oil over medium-high heat. Add the meat, season with salt and pepper and cook until browned, 3-4 minutes.
  • Stir in the onion, carrots and garlic and cook until softened, 5-7 minutes.
  • Stir in water, the chicken broth and tomatoes; cover and bring to a boil.
  • Add the pasta and cook until al dente, about 15 minutes. Stir in cream.
  • Season with salt and pepper. Serve with Parmesan.
