Creamy Milk Pudding (Basoondi)

Basundi is a sweet, thickened milk dessert popular throughout India.

  • 1 cup ricotta cheese
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1⁄2 cup sugar


  • In a bowl of a food processor or blend, combine the ricotta cheese, milk, cream, and sugar. Blend until very smooth.
  • Transfer the mixture to a heavy-bottomed pan. Heat on low for about 40 minutes, stirring frequently. This mixture needs to cook on a very low heat. The mixture will become creamy and have a very pale yellow color. The final consistency should be that of a creamy custard.
  • Remove from heat. Cool to room temperature, about 1 hour.
