Crème Chantilly (Chantilly Cream)
Who invented the wonderful Crème Chantilly in France in the eighteenth century? Historians are still debating it, but food lovers all over the world all agree: whipping cream is just too good to be true.

- 2 cups whipping cream
- ⅔ cup powdered sugar
- An hour ahead, make sure that your whipping cream is in the refrigerator, and put the bowl of the stand mixer in the refrigerator too. You can also put the bowl in the freezer for 20 minutes.
- Put the whipping cream in the chilled bowl of a stand mixer. Start whisking slowly, then more firmly after 20 seconds. When the cream starts to get thick, pour in the powdered sugar. Keep whisking until the cream is fluffy. Be careful not to overbeat it; it will turn to butter!
- Keep in the refrigerator for 2 hours before serving.
